In food preservation, activated charcoal is only used in a secondary role based on its strong adsorption properties. Its primary function is in packaging systems or as a processing aid to eliminate undesirable compounds that cause food to spoil. It adsorbs odours, volatile organic compounds (VOCs), ethylene gas (the ripening hormone for fruits and vegetables), and moisture that are mixed in with the surrounding environment of packaged foods or in the storage facilities. Thus it helps extend shelf life, maintain quality attributes (e.g. freshness, colour) and can prevent off-flavours.
 
That said, activated charcoal is not a food-preserving additive the way antimicrobials are food-preserving additives. There is very strict regulation of its use. It is generally recognized as safe (GRAS) but only for specific indirect applications (e.g. filtering water, oils used in processing; as packaging liners, sachets, or filters in containers). It adsorbs the substances that make the surroundings cleaner, lower in moisture, and devoid of ethylene gas to lessen the degradation. It is considered a conjunctive or non-nutritive additive.
